Crispy Salt & Vinegar Chickpeas

Apologies but halfway through this video my cat attacks me.  A dog would never do that ๐Ÿ˜ƒ

When I decided to become plant-based and make a real effort to reduce my intake of processed food I didn't want to forgo the pleasures of simple things like beer and nuts.

In a previous blog post https://www.r1se.co.uk/blog/kombucha-my-new-beer I talked about the beer and in this one, we have my nuts alternative. Crispy Salt & Vinegar Chickpeas.

We buy our chickpeas by the sack full from Lembas (see previous post https://www.r1se.co.uk/blog/lembas). I then pop 1 cup with 2 cups of water in the pressure cooker setting of my ninja foodi for 40 minutes and voila chickpeas as if they have just come form the can.

I then let them cool down and put them in Tupperware and cover them in distilled vinegar.  I allow them to absorb the vinegar and flavour for a few days (although 1 is fine).

I then drain them and rub in a couple of tablespoons of olive oil.

Next into the Ninja Foodi  (https://www.r1se.co.uk/blog/kitchen-essentials) again for about 10 minutes on Air Fryer mode.  Out they come, grind on some salt and maybe pepper and your bar snacks are ready.

You could also use mild curry powder, cayenne pepper, paprika, just experiment.
